Soft water/Hard water!!??

If you live in a soft water area you should start with around 300/350 grammes of water. Depending on the softness of the water you will need less than the recommended 400 g.

Initially the mixture will be quite sloppy but after proving it will firm up.

Once dough has been proved, kneaded and shaped you can prove again before baking.
